Y11 you should be choosing your final 4 dishes to cook in your practical assessment; 2 savoury, 2 sweet. All dishes MUST include a dairy product - milk, butter, cheese, cream, yoghurt.

You should be refining your dishes so that you know exactly what the ingredients are and how you will cook each dish.

You need to be developing an ORDER OF WORK so that you can successfully complete the task.  You need to have an order of work for each lesson from now to your assessment so that you get used to working under pressure and that you manage to complete everything on time.

Think about HOW your dish is to be presented and an appropriate decoration or garnish.

Each dish must be for a minimum of 2 servings so you do not need to cook lots of food!! Cakes and quiches will be left as they are but other dishes you only need for 2 servings.

ALL INGREDIENTS MUST BE BROUGHT TO THE FOOD ROOM AND REFRIGERATED AT THE BEGINNING OF THE DAY AND COLLECTED AT THE END OF THE DAY.  HEALTH & SAFETY RULES.

DO NOT FORGET TO BRING A SUITABLE CONTAINER IN ORDER TO TAKE YOUR PRODUCT HOME.

PLEASE MAKE SURE YOU HAVE ALL INGREDIENTS AS THERE ARE ONLY A FEW BASICS IN SCHOOL WHICH YOU MUST PAY FOR IF USED.
